My family is of East Indian Origin. I love creating new recipes since I become bored very easily with the same old. So one day I just got the inspiration to produce a roti (flat bread) that was not only tasty but also healthy. So there is the inspiration for this dish/bread.
Ingredients
- 3 cups all-purpose flour 3 3cups cupsall-purpose flour
- 1/2 cup soaked urad dal 1/2 1/2cup cupsoaked urad dal
- 5 cloves garlic , peeled and grated5 5cloves clovesgarlic, peeled and grated
- 2 tbsp fresh coriander , chopped2 2tbsp tbspfresh coriander, chopped

- 1 tbsp baking powder 1 1tbsp tbspbaking powder
- 1/4 cup Yogurt 1/4 1/4cup cupYogurt
- 1/2 cup water 1/2 1/2cup cupwater
- 1 tsp baking powder 1 1tsp tspbaking powder
- 1/4 tsp tumeric 1/4 1/4tsp tsptumeric
- 1-1/2 tbsp oil 1-1/2 1-1/2tbsp tbspoil or margarine
Preparation
Step 1: Pick and Wash Urad Dal very well until no foamy residue remains. Soak Urad Dal for about two hours in hot water to which 1 tsp of baking powder is added. Step 2: After two hours rinse urad dal thoroughly and drain in colander for few minutes. Step 3: Add Urad Dal, garlic, chopped coriander, green chillies, yoghourt and salt to blender and blend until liquefied (for about 3-4 minutes) Step 4: In another large bowl mix all-purpose flour, 1 tblsp of baking powder and 1/4 tsp of tumeric and mix well together. Add 1 1/2 tblsp of melted margarine/oil to 1/2 cup of water and add this mixture to the flour mixture. Knead together for about 5-6 minutes. If mixture appears dry then add little water at a time to bring consistency to that of flat-bread consistency. Divide dough into nine or so equal portions and make into nice smooth rounds Make sure that there are no cracks in the rounds (this is essential so that they will puff up nicely during the cooking process). Oil each round slightly but thoroughly and place them in large-sized flat plastic container with lid and leave to rest for about 45 minutes. Step 5: Place griddle or non-stick pan on fire and heat till smoking. In the meantime roll out the rounds on rolling board/flat sanitized surface to about 7-8 inch round. Place on hot griddle or non-stick pan and roast for about 2 minutes until bubbles appear on surface. Flip over to other side and cook for additional three minutes. Oil surface slightly and flip after this. Should puff up at this point. (It is okay to reduce heat to about medium-high after first five minutes) Place on clean dish and cook remaining rotis in the similar manner. This roti can be served with your favorite soup, vegetables or can be made into a delicious sandwich made your way. This roti freezes well. So make yourself a batch of these for use during the week when life gets too hectic. Cheers!!
