Very Versitile Veggie Dish
Ingredients
- 1 large can stewed tomatoes 1 1large can large canstewed tomatotomatoes
- 1 package frozen spinach 1 1package packagefrozen spinach
- 1 cup uncooked rice 1 1cup cupuncooked rice
- 2 tbsp extra-virgin olive oil 2 2tbsp tbspextra-virgin olive oil
- 6 cloves of garlic 6 6cloves of garlic
Preparation
Chop garlic and cook in oil pot until golden. Add tomatoes and let simmer for 30 min. Add the rice and spinach, cover tightly and cook until rice is done. Add water if dish becomes dry. Note** You can use fresh spinach, or an other greens in place of the frozen spinach. I also experiment with different kinds of rice and will add different types of beans for the protein to make it a complete meal.
