Very Versitile Veggie Dish

Ingredients

  • 1 large can stewed tomatoes 1 large can stewed tomatoes
  • 1 package frozen spinach 1 package frozen spinach
  • 1 cup uncooked rice 1 cup uncooked rice
  • 2 tbsp extra-virgin olive oil 2 tbsp extra-virgin olive oil
  • 6 cloves of garlic 6 cloves of garlic

Preparation

Chop garlic and cook in oil pot until golden. Add tomatoes and let simmer for 30 min. Add the rice and spinach, cover tightly and cook until rice is done. Add water if dish becomes dry. Note** You can use fresh spinach, or an other greens in place of the frozen spinach. I also experiment with different kinds of rice and will add different types of beans for the protein to make it a complete meal.
