Warm Cheese and Bacon Dip

This dip is a wonderful appetizer. It is served warm on crackers or bread. It even makes a great topping for baked potatoes. It is ALWAYS a hit at parties, and smells delicious as it is being warmed.

Ingredients

  • 1 8oz cream cheese
  • 1 500g sharp white Cheddar cheese, shredded
  • 1 cup mayonnaise
  • 1 bunch green onions, chopped
  • 15 Ritz crackers, crushed
  • 1 85g pkg fully cooked  bacon, pieces

Preparation

In a medium sized mixing bowl, cream together the cream cheese and the mayonaise. Add the shredded, white cheddar and then chopped green onion, one at a time, mixing after each addition until thoroughly combined. Spread this mixture evenly into a shallow, microwave safe dish and set aside. Coarsly crush the Ritz Crackers using a food processor or by placing on a plate and using the bottom of a clean, plastic cup. Place the crushed crackers in a small mixing bowl. Add the bacon peices and mix well. Spread cracker and bacon mixture over top of of the cheese mixture until it is completely covered. Cover the dish with plastic wrap, leaving one corner free to allow air to vent. Refrigerate until ready to heat. Immediately before serving, microwave on high for 6-7 minutes until the dip is heated completely. Cooking times may vary depending on the microwave used. Serve on Toppables crackers, Ritz crackers or on small slices of French Bread.
