Weiner and Vegetable Casserole

Prepare all your vegetables, put in roaster.

Ingredients

  • 1/2 lb weiners 1/2 lb weiners
  • 1 cup raw potatoes , diced1 cup raw potatoes, diced
  • 1 cup raw red onions , diced1 cup raw red onions, diced
  • 1 cup celery , diced1 cup celery, diced
  • 1-1/2 cup raw carrots , diced1-1/2 cup raw carrots, diced
  • 1/8 tsp black pepper 1/8 tsp black pepper
  • 2 cups hot water 2 cups hot water
  • 1 Tbsp curry powder 1 Tbsp curry powder
  • 3 Tbsp flour 3 Tbsp flour
  • 1 cup tomato juice 1 cup tomato juice
  • 1 Tbsp butter 1 Tbsp butter

Preparation

Quarter wieners and put in baking dish with raw vegetables. Sprinkle with pepper and add hot water. Cover dish and cook in moderate oven for one hour on 350 degrees F. Blend curry powder and flour etc. mix with juice. Add butter and pour and bake for another 30 min. uncovered. Variation: Could use sausages instead of weiners, could use salt optional. Could multiply the amount of vegetables used according to how many people you are having.
