Weiner and Vegetable Casserole

Prepare all your vegetables, put in roaster.

  • 1/2 lb 1/2lbweiners
  • 1 cup 1cupraw potatopotatoes, diced
  • 1 cup 1cupraw red onionred onions, diced
  • 1 cup 1cupcelery, diced
  • 1-1/2 cup 1-1/2cupraw carrotcarrots, diced
  • 1/8 tsp 1/8tspblack pepper
  • 2 cups 2cupshot water
  • 1 Tbsp 1Tbspcurry powder
  • 3 Tbsp 3Tbspflour
  • 1 cup 1cuptomato juice
  • 1 Tbsp 1Tbspbutter

Quarter wieners and put in baking dish with raw vegetables. Sprinkle with pepper and add hot water. Cover dish and cook in moderate oven for one hour on 350 degrees F. Blend curry powder and flour etc. mix with juice. Add butter and pour and bake for another 30 min. uncovered. Variation: Could use sausages instead of weiners, could use salt optional. Could multiply the amount of vegetables used according to how many people you are having.
