An Easy Casserole dish, that I also make in a skillet, or electic frying pan. Its a wonderful dish and very easy to make. Served over rice, and give to any guests and it's always a hit... Gillian

Ingredients

  • 1 large onion , sliced into thin rings1 large onion, sliced into thin rings
  • 1 large green pepper , sliced into thin strips1 large green pepper, sliced into thin strips
  • 1 cup sliced mushrooms 1 cup sliced mushrooms
  • 2 tbsp water 2 tbsp water
  • 2 tsp oregano 2 tsp oregano
  • 3/4 tsp crushed red pepper 3/4 tsp crushed red pepper
  • 1 tsp tabasco sauce , or more to taste1 tsp tabasco sauce, or more to taste
  • 1 can tomatoes 1 can tomatoes
  • 2/3 cup peanut butter 2/3 cup peanut butter
  • 2 tsp chicken bouillon 2 tsp chicken bouillon
  • 3 chicken breasts , cubed, bite size3 chicken breasts, cubed, bite size

Preparation

Combine first 8 ingredients, cook over medium heat, stirring frequently until vegetables are tender and crisp. In a blender combine undrained tomatoes, peanut butter and bouillon. Process until smooth. Place uncooked chicken in large casserole dish. Top with vegetables mixture, pour tomatoes, butter butter mixture over top. Cover and bake at 350 deg. oven for 50 minutes, or until chicken is cooked. If I used skillet or electric frying pan, I cook the chicken separate and then add to other ingredients. Then just heat it up. Serve over rice
