Whole Wheat Buttermilk Pancakes with Fruit

Ingredients
- 3/4 cup bread flour 3/4 3/4cup cupbread flour
- 3/4 cup whole wheat flour 3/4 3/4cup cupwhole wheat flour
- 3 tbsp sugar 3 3tbsp tbspsugar
- 1/4 tbsp salt 1/4 1/4tbsp tbspsalt
- 2-1/2 tsp baking powder 2-1/2 2-1/2tsp tspbaking powder
- 1 tsp baking soda 1 1tsp tspbaking soda
- 1 tbsp maple syrup 1 1tbsp tbspmaple syrup
- 1 large egg 1 1large egglarge eggs
- 1 cup buttermilk 1 1cup cupbuttermilk
- 3/4 cup 2% reduced fat milk 3/4 3/4cup cup2% reduced fat milk
- 2-1/2 tbsp canola oil 2-1/2 2-1/2tbsp tbspcanola oil
- 1 cup berries , (or chopped fruit)1 1cup cupberries, (or chopped fruit)
Preparation
In a large bowl, combine dry ingredients. In a medium bowl, combine remaining ingredients except for oil and berries; mix well. Add wet ingredients to dry ingredients; mix until smooth. Lightly coat a griddle or large saute pan with canola oil and heat over medium heat. Ladle approximately 3 tablespoons batter on griddle and sprinkle with 1 tablespoon berries. Cover berries with 1 additional tablespoon batter and cook until bubble form. Flip and cook other side until golden brown.
