Zucchini Pepper Combo

Ingredients
- 2 zucchinis , unpeeled, seeded and quartered lengthwise2 zucchinis, unpeeled, seeded and quartered lengthwise
- 2 tsp olive oil 2 tsp olive oil
- 1 red pepper , diced1 red pepper, diced
- 1 yellow pepper , diced1 yellow pepper or orange pepper, diced
- 1/2 tsp lemon pepper 1/2 tsp lemon pepper
- 2 tsp balsamic vinegar 2 tsp balsamic vinegar
Preparation
Heat olive oil in large non-stick frying pan or wok on medium high. Add zucchini, red pepper and yellow peppers and lemon pepper. Stir-fry for 5-7 minutes until tender crisp.
Sprinkle with balsamic vinegar and pepper. Stir and serve immediately.
