Fresh bay leaves are readily available in the fresh herb section of most grocery stores. If you can't find them, stuff the trout cavities with fresh herbs such as dill, parsley, thyme or tarragon. Arctic char is also particularly good prepared this way.
Our fishing guide prepared this over an open fire. I was in absolute awe of his culinary skill as he poached a trout in one pot and swirled together a quick brown butter sauce in a skillet. The results are equally delicious at home.
Herbed butters are traditional accompaniments to grilled fish, and the tarragon in this one goes especially well with trout or salmon. For this spectacular presentation, fold back the crisped skin to reveal the pink flesh over which the seasoned butter melts.
Rainbow trout is a perfect quick-cooking fish. When it's seared, the tender flesh—enhanced here by smoky, spicy chipotle chili powder—practically falls off the skin. Filled with colourful veggies, smoky lentils and a citrusy vinaigrette, this salad is a comforting meal served warm, and any leftovers make a light, refreshing lunch straight out of the fridge.
When it comes to choosing fish for dinner, look for sustainable options. Farmed trout is a great fish to put on your plate, and with 18 grams of protein and just 5 grams of fat per serving, it's a good choice to protect both the state of our oceans, and your health.
The flesh of lake trout can range from flesh tones to deep pink. The brighter colour comes from the amount of small freshwater crustaceans consumed, but this in no way affects its distinctive flavour or quality. This stuffed whole fish makes an easy and elegant presentation on a bed of salad greens.
This dish combines ease of preparation with lots of flavour. The coleslaw is as colourful as it is healthy and provides a refreshing crunch to complement the tenderness of the trout. The Wasabi Tartar Sauce is a zesty twist on an old favourite and helps make this dish a special treat for friends or family.
Colourful Yellow Tomato Toasts and easy-to-make Barbecued Mini-Potatoes (see recipe links below) round out this summerfresh meal.
