Not only are these roll-ups quick hors d'oeuvres but they also make tantalizing lunch fare for kids and adults alike.

Ingredients

  • 1/2 cup light mayonnaise
  • 2 tbsp chopped fresh coriander
  • 1 tbsp Dijon mustard
  • 1 jalapeno pepper, seeded and minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 large (10-inch/25 cm) whole wheat tortillas
  • 1/2 cup thinly sliced red onions
  • 8 oz thinly sliced smoked turkey

Preparation

In bowl, combine mayonnaise, coriander, mustard, jalapeno pepper, salt and pepper.

Spread each tortilla with heaping 2 tbsp (25 mL) mayonnaise mixture; sprinkle with red onion. Arrange 3 slices turkey on each; roll up tightly. (Make-ahead: Wrap individually and refrigerate for up to 24 hours.) Cut into 3/4-inch (2 cm) pieces.

Additional information : Variation
Salsa and Avocado Roll-Ups: Omit mustard and red onion. Add 1 tbsp (15 mL) salsa, finely chopped. Sprinkle with 1 avocado, peeled, pitted and finely chopped.
