Grease or line rimless baking sheets with parchment paper; set aside.

On lightly floured surface, roll out dough to 1/4-inch (5 mm) thickness. Using 3-inch (8 cm) cookie cutter, cut out shapes. With spatula, place shapes, about 1 inch (2.5 cm) apart, on prepared pans.

Bake in top and bottom thirds of 375°F (190°C) oven, rotating and switching pans halfway through, for about 10 minutes or until light golden on bottom and edges. Let cool on pans on rack for 1 minute. With spatula, transfer to rack; let cool completely.

Decorate with icing paint as desired. (Make-ahead: Store in airtight container for up to 5 days or freeze for up to 1 month.)
