Lentils, rice and vegetable flakes make a colourful, healthy gift for vegetarians — or anyone who enjoys hearty soup. Look for the ingredients at bulk-food stores. Include a set of soup bowls and the recipe for Lentil Soup (see below) with this mix.

Lentil Soup Mix:

In bowl, stir together lentils, vegetable flakes, rice, garlic flakes, thyme, marjoram, salt and pepper. Spoon into decorative airtight bag or jar. (Make-ahead: Store at room temperature for up to 2 months.)

To Cook Lentil Soup:

  • 8 cups vegetable or chicken stock (approx.)
  • 1/4 cup tomato paste 
  • 1 1/4 cups Lentil Soup Mix
  • 2 tbsp grated Parmesan Cheese
  • 1 green onion, sliced.

In a large saucepan, bring stock and tomato paste to a boil. Add Lentil Soup Mix; reduce the heat, cover and simmer, adding more stock or water if desired to thin the soup, until lentils and rice are tender, about 30 minutes. Garnish with Parmesan and green onion. Makes 4 to 6 servings.
