I don't eat beef, but I love shepherd's pie, so I decided to make up my own. Instead of potatoes, I use sweet potatoes because they add a bit of sweetness to the pie, and the colour is gorgeous on a crisp white plate! The addition of the cheese on top balances the sweetness of the potatoes and provides a delicious gooey treat! I mean, hey, isn't everything better with cheese?

Peel and boil sweet potatoes until tender. Meanwhile, heat olive oil over medium heat and saute onion and 1-2 minced garlic for about 3-5 minutes (until translucent) Add the ground chicken or turkey and cook for 5 minutes before adding the carrots and celery. Cook unti the meat is browned.Stir in poulty seasoning, thyme, salt and pepper. Add flour and cook for one minute. Add stock and simmer until thickened to a gravy.
Pour into a glass baking dish. When the sweet potatoes are done. Mash them with butter and 2 cloves of garlic. Spread the mashed sweet potatoes over the meat mixture. Top with grated cheddar cheese. Bake at 350ºF for 30 minutes.
