A classic from Spain’s Catalonia region, Romesco Sauce is made with tomatoes, red peppers, almonds and garlic. Traditionally served with grilled fish or poultry, it makes a tasty sandwich topping or dip, too.
The combination of shortening and butter gives these pretty rolled biscuits a crisp flakiness with a lovely buttery flavour that pairs well with soups and stews. When cutting biscuit dough, make sure to cut straight down and not twist the cutter, which can seal the biscuits' edges and prevent them from rising fully.
Golden potatoes give this a bright glow, but white potatoes work well, too.
Thanks to the mushrooms, this has the taste of luxury. If that doesn't make it special enough, Chive Mayonnaise (recipe follows) and caramelized onions will.
This sauce does double duty: it moistens the patty then tops it, adding a fresh and creamy note to the burger. Use less expensive tail pieces of salmon if you can. Be sure to run your fingers along the top of the salmon. If you feel any tips of bones, pull them out with tweezers.
This is a fantastic way to incorporate other vegetables into a classic meat-and-potatoes dish. Kids will never notice them disguised as delicious pizza toppings. Serve with Golden Roast Potatoes or Creamy Mashed Potatoes.
Hazelnut oil can withstand roasting, but the flavour diminishes slightly, so drizzle a bit more over the chicken before serving to restore the uniquely nutty flavour.
