You can fill the thumbprint in these cookies with other jams, too. Or before baking, press an unblanched almond into the cookie instead of making an indentation.

Ground chai tea and some additional ground chai spices give these buttery almond cookies a subtle, pleasing flavour. Find loose-leaf chai tea in bulk food stores or specialty tea shops. In a pinch, empty a tea bag or two to get the proper amount.

These cakes are inspired by financiers, the rich almond cakes that are a French pastry shop favourite. We used Nordic Ware mini cake and candy moulds for the photo, but mini tart or muffin tins are suitable, too.
