Tilapia is a great (and sustainable) fish option, but you can substitute halibut, catfish, cod or any other firm white-fleshed fish. Serve with lime wedges.
The quick yeast method yields slightly thick crackers, and the even quicker yeastless method makes thin crackers.
Garnish the log with sliced olives and parsley sprigs and serve with crackers.
