When bread machines first became popular a few years ago, The Canadian Living Test Kitchen got busy adapting recipes. Very easy to make in the machine — and almost as easy by hand — this loaf is nutty, chewy and just plain good.
Chunks of peaches put flavour in every bite of these muffins. If fresh peaches are unavailable, drain canned or thawed peaches well and place on paper towels to absorb any excess liquid before using.
If you don't have pumpkin seeds, substitute your favourite kind of nut or seed. Toast pumpkin seeds in dry skillet over medium heat until golden. (This method works for any seed.)
Pepitas (green pumpkin seeds) and sesame seeds add crunch to these bite-size biscotti.
