Flavoured butters are some of the easiest gifts to make and will be much appreciated when you include gift tags outlining their possibilities: slice and melt over fish or steak, blend into mashed potatoes or vegetables, toss with pasta or rice, or melt and pour over sautéed shrimp (one of the mini-logs is enough for 1-1/2 lb/750 g large shrimp).
The apple flavour makes this marinade a perfect pairing for pork chops. If you can't find apple cider, you can use apple juice. This marinade is also great with chicken and ribs.
To slice beets accordion-style, place two wooden spoons parallel on a cutting board. Place each beet between the handles and slice. The knife will stop at the handles.
Mild and rich smoked trout is special enough for a festive brunch tart.
