Method

Simple Syrup: In saucepan, stir together water and sugar. Bring to boil; cook until sugar is dissolved, about 2 minutes. Remove from heat; let cool for 10 minutes. Refrigerate until chilled, about 15 minutes.

In 2-cup liquid measure, stir together lemon juice, gin and Simple Syrup until combined. Divide among 8 champagne flutes (about 1/4 cup each). Top with sparkling wine; garnish with zest. 

Test Kitchen Tip: To ease preparation, buy a steamed lobster at the grocery store.

Did you know?: Dating from the First World War, the French 75 was named after France's powerful 75-millimetre cannon. Originally made with gin, brandy, lemon juice and grenadine, it has evolved into the gin-based Champagne cocktail we enjoy today.

CHANGE IT UP: Blood Orange French 75 Cocktail
Substitute blood orange zest and juice for the lemon zest and juice.
