Wild rice lends an extra Canadian touch to your holiday meal. It takes longer to cook than the average grain (partially because it's a type of grass), but it's a hands-off side dish that doesn't require constant attention.

Ingredients

Method

In saucepan, melt butter over medium heat; cook onion, carrot and celery, stirring occasionally, until softened, about 5 minutes. Add garlic; cook, stirring, until fragrant, about 1 minute. Add rice; cook, stirring, for 1 minute.

Stir in broth, salt and pepper; bring to boil. Reduce heat to low; cover and simmer until about 2 tbsp liquid remains and most of the rice is split open, about 80 minutes.

Remove from heat. Stir in apricots; cover and let stand for 10 minutes.

Stir in parsley, tarragon, lemon zest and lemon juice.
