Method

Place potatoes in large saucepan and cover with cold water; season with salt. Bring to boil; reduce heat to medium. Cook until potatoes are tender, 10 to 15 minutes.

Meanwhile, in large skillet, melt butter over medium heat. Add ham; cook, stirring occasionally, until golden brown, about 5 minutes. Add garlic; cook, stirring constantly, about 2 minutes. Remove skillet from heat.

In small bowl, combine vinegar, sugar and mustard. Drain potatoes and transfer to serving bowl. Add ham mixture, dressing and parsley; toss to coat well.
