In large nonstick skillet, heat oil over medium-high heat; cook pork, turning, until browned on all sides, 6 to 8 minutes.Meanwhile, in bowl, mix maple syrup with mustard; set aside.
Arrange pork on lightly greased foil-lined rimmed baking sheet; bake in 425 F (220 C) oven, turning and brushing with half of the maple syrup mixture halfway through, until juices run clear when pork is pierced and just a hint of pink remains inside, 12 to 15 minutes. Transfer to cutting board; cover loosely with foil and let stand for 5 minutes. Cut into 1/2-inch (1 cm) thick slices; toss with remaining maple syrup mixture and the salt and pepper.
Chili Onions and Peppers: Meanwhile, in same nonstick skillet, heat oil over medium heat; cook onion, stirring occasionally, until softened and light golden, about 8 minutes. Add yellow pepper, orange pepper, chili powder, garlic, salt, pepper and cumin; cook, stirring, until peppers are softened, about 7 minutes.
In small bowl, mix yogurt with lime juice. Top tortillas with yogurt mixture, onion mixture, pork, avocado and cilantro. Serve with lime wedges.
