In large skillet, heat 2 tsp oil over medium heat. Add onion and cook, stirring occasionally, until softened, about 3 minutes. Add garlic, turkey and oregano. Season with salt and pepper. Cook, stirring and breaking up meat with wooden spoon, until turkey is no longer pink, about 5 minutes. Transfer to plate; set aside.
In same skillet, heat remaining oil over medium-high heat. Add zucchini; season with salt and pepper. Cook, stirring occasionally, for 5 minutes or until softened. Return turkey mixture to skillet. Add spinach and cook, stirring occasionally, until softened, about 2 minutes. Remove skillet from heat and add tomatoes.
