This southwestern take on a traditional favourite will have everyone asking for seconds. The beef can easily be replaced by ground turkey. For those that enjoy a little heat, add an extra jalapeño pepper.

Method

In large skillet, heat oil over medium heat; cook onion, jalapeño pepper and garlic, stirring occasionally, until softened, 6 to 8 minutes.

Add beef; cook over medium-high heat, breaking up with spoon, until browned, about 5 minutes. Drain off fat.

Add chili powder, cumin, coriander and salt; cook for 1 minute. Add tomatoes, beans, corn, lime juice and honey; cook until slightly thickened, 4 to 5 minutes. Stir in green onions.

Divide evenly among bottoms of buns; sprinkle with cheese. Cover with tops of buns.
