Sweet-Spicy Pork Sub

Method

Preheat oven to broil. In large skillet, heat 1 tbsp of the oil over medium-high heat. Add mushrooms; cook, stirring occasionally, until beginning to brown, 3 to 4 minutes. Add onions; cook, stirring often, for 2 to 3 minutes. Remove from skillet; keep warm.

On baking sheet, open buns and top each with 2 half-slices of cheese. Bake until bread is toasted and cheese is melted, about 2 minutes.

In same skillet, add remaining oil. Add pork; cook until no longer pink, 2 to 3 minutes. Add 3/4 cup Sweet Chili Barbecue Sauce; cook for 1 minute. Top each bun with pork, the reserved mushrooms and onions, the lettuce, tomatoes, pickles; drizzle with Sweet Chili Barbecue Sauce.

 

 

Sweet Chili Barbecue Sauce In bowl, mix 1 cup barbecue sauce with 1/2 cup sweet chili sauce and 1 tbsp maple syrup.

Makes 1 1/2 cups.
