Fuel up for a fun night of cheering on Team Canada with a beautiful, colourful and patriotic appetizer tray. Here's how to make one.

Choose an extra-large platter or large wooden cutting board for serving.

Arrange halved grape tomatoes on the platter to create the red bars of the Canadian flag. Trace maple leaf template (right) onto paper and cut out; cut red pepper quarters into pieces to fill template shape, then arrange them in the centre of the platter. Fill in the gaps between the maple leaf and the red bars with cauliflower florets.

Using 1-1/2 inch (4 cm) letter-shaped cookie cutters, cut letters from cheese to spell out your message. Choose a cheese that's easy to cut and not too crumbly, such as mozzarella or mild Cheddar.

For vibrant green broccoli florets, blanch them in boiling water for
15 seconds, then chill in ice water before draining and arranging on the platter.

Arrange sliced carrots alongside the broccoli for some colour contrast.

Serve with your favourite dip.

Tip from The Test Kitchen:  Cut multiple red pepper pieces and layer them to ensure your maple leaf is level with the cauliflower surrounding it.
