Method

In saucepan of boiling salted water, cook 4 cups fresh or frozen peas for about 3 minutes; drain. In food pro­cessor or blender, purée drained peas, 1/3 cup avocado or olive oil, 1/4 cup lemon juice, 2 tsp grated fresh ginger and 15 mint leaves. Press mixture through fine sieve. Season with salt and pepper.
