Bite-size pastry cups filled with a classic bacon, cheese mixture.
This is my favourite recipe, When I serve it to first time guests they often request it when invited back. It goes together quickly and I serve it over chicken flavoured rice along with a salad a couple of seasonal vegetables.
My mother used to make this when I was a young girl. In those days she had access to fresh farm cream and this dish was a very special treat as well as easy to make. It is even better reheated as a midnight snack.
Pernod, the French licorice spirit adds a distinctive note to the chowder. You can add a few strips of tomato and green onion (scallion) to garnish each soup bowl.
