Give your holiday bird a southern twist with this pecan stuffing. The turkey and gravy are further flavoured with a little bourbon or Tennessee whisky, a surprising but excellent flavour enhancer for poultry. Even without the bourbon, the stuffing is delicious.
Foods such as meat loaf or pate cook more evenly when prepared in a ring mould. Because this dish can't be stirred, be sure to rotate it during the cooking time. Test with a meat thermometer in several places to make sure it is evenly cooked through.

Look for lean sausage with lots of taste. If your sausage has fennel seeds, reduce or omit them from the dressing.
