Crab and Sticky Rice

Crab and Sticky Rice

Sep 28, 2009

This Taiwanese specialty, in which fresh crab steams over cooking rice, is usually prepared in a large steamer, but I've adapted it to conveniently cook in an oven. Either long- or short-grain white sticky rice (also called glutinous rice) can be used.

Abitibi Game Pie

Abitibi Game Pie

May 13, 2009

Come winter or late fall, there is nothing like sharing a savoury meat pie from Abitibi with family and friends. Commonly called tourtière, cipaille or tourte, there seem to be as many recipes as there are amateur of this hearty fare. The tourte, the bird that gave it its name, is unfortunately extinct, but the tradition of this delectable, easy to prepare in advance dish, is very much alive. Deer, caribou, moose, bear, boar and especially hare make it a very special treat. The fortunate cook, who has hunters in the family or generous friends to donate a little game, is blessed. Even more, if they are willing to help deboning and dicing the meat. However, it can also be prepared with farm raised deer, caribou, boar, rabbit and adding shoulder or loin of pork, as some game is very lean. The important thing to remember is (that the recipe calls for) half part game, preferably a variety of three different kinds, to half part diced potatoes. With some home-made tomato ketchup and a nice green sassy salad, like chicory with old style mustard and cider vinegar dressing, the hostess can sit back and enjoy the hunters' long tales.

Chorizo and Black Bean Empanadas

Chorizo and Black Bean Empanadas

Dec 3, 2012

While these savoury little pies take a bit of time to prepare, they are well worth the effort. The dough is forgiving and can handle being stretched over the filling. Serve with a tomatillo or tomato salsa.

Hot and Spicy Noodle Salad

Hot and Spicy Noodle Salad

Jul 14, 2005

Kids seem to especially love noodle salads with their crunchy vegetables and appealing sauces, particularly peanut sauce. If your children don't like spicy food, just omit or reduce the hot chili paste. You can also leave out the coriander or replace the egg with shredded cooked chicken.

Braised Pork Shoulder and White Beans

Braised Pork Shoulder and White Beans

Sep 28, 2009

The humble pork shoulder roast becomes meltingly tender when braised. A bone-in pork picnic roast or boneless pork butt roast can be used interchangeably in this recipe, depending on what is available (but if using a shoulder picnic roast, leave its fat cap on for extra flavour). The Garlic Vinegar Sauce adds a hit of acidity to cut through the richness of the meal. Pass it around so that each person can add it according to taste.

Kale and Pancetta Quiche

Kale and Pancetta Quiche

Jan 31, 2008

A pale yellow filling laced with green kale in a golden crust is pretty enough for any brunch table. With all the components ready and waiting in the fridge, it takes only minutes to assemble and pop the quiche in the oven.

Pulled Venison Sandwich

Pulled Venison Sandwich

Mar 26, 2009

My dish is a classic family dinner; it has meat, potatoes, and vegetables. It can also be a grab and go, if you make the sandwich on its own. This dish must be served hot, on a Kaiser roll. It is ideal to hollow out some of the roll, this helps avoid spillage. In my household we serve it with roasted garlic mashed potatoes and sautéed green beans. When we have celebrations in our home we like to cook buffet style, and these sandwiches are ideal because the meat can sit in a slow cooker and be eaten periodically without any affect to its taste. My inspiration for this pulled venison sandwich came from my father; the reasoning behind that is, he hunts for deer and brings us meat. After several years of cooking it the same way I became bored of it and looked for a new solution. Being an avid watcher of the Food Network I am inspired by many Chefs who appear on that channel. Following an episode of Rachel Ray?s 30 Minutes Meals I decided to try her pulled pork recipe with venison instead. This was a hit at my dinner table and now we can?t get enough of it!

Mole Chicken

Mole Chicken

Oct 31, 2008

An intensely rich and complex sauce of chilies, seeds and chocolate, mole (pronounced moh-lay) sauce is the basis for mole chicken, turkey and cheese enchiladas. This recipe makes enough for two batches of Mole Chicken (see below) plus opportunities to use it to coat fish or pork chops.
