Stuffed with a creamy cookie-crumb filling, these soft chocolate cookies are a cocoa lover's dream. When breaking up the wafer cookies, be sure to leave a few larger chunks for a visually interesting effect.
So simple it's almost scandalous, this mix of homemade chocolate wafers and whipped cream is dressed up with raspberries and deliciously accented with lemon. For Valentine's Day, a heart shape is the obvious choice, but you can also make the cake round or rectangular.
More fudge than cookie, these nuggets were a discovery food writer Linda Stephen made in New Zealand. Kids will love crushing the vanilla wafers to make crumbs – simply place in a resealable plastic bag and crush with a rolling pin until crumbly.
If you love Turtles, you'll love these pecan-loaded squares. Grinding pecans in a food processor and adding them to the crust gives these squares a rich and nutty twist. You'll need to start with about 2-1/2 cups of vanilla wafers.
Nine 8-inch (20 cm) round wafers form the basis of this spectacular torte, which is sandwiched with whipped cream and drizzled with raspberry sauce. If fresh raspberries are in season go ahead and use them. If fresh raspberries aren't available, use unsweetened ones that have been individually quick-frozen.

Nanaimo Bars have always been my absolute favourite square, and from that I got the idea for this fabulous frozen dessert. A Bird's vanilla-custard batter with chocolate graham wafer, walnut, and coconut crumbled throughout, topped with your favourite chocolate sauce. The response every time someone tastes it?: "Wow! This tastes just like Nanaimo Bars!"

This swirl-topped cheesecake looks very impressive at the table. But don't be intimidated by it. Because the two batters have very similar textures, they swirl together with ease. For an elegant finish, garnish each serving with a dollop of whipped cream and a whole hazelnut or a hazelnut wafer cookie.
