Almond Butter Energy Bites

These irresistible bite-size snacks are packed with nutritious ingredients and make for a feel-good pick-me-up you can enjoy any time of day.

In large bowl, combine oats, almond butter, maple syrup, apricots, almonds, cashews, poppy seeds, lemon zest and juice. Refrigerate for 30 minutes.

With dampened hands, gather 1 tbsp of the mixture at a time and shape into balls. Roll in chopped almonds (if using). (Make-ahead: Can be refrigerated in an airtight container for up to 7 days.)
