Method
Preheat oven to 350°F. In food processor, pulse Brie, cream cheese, Emmenthal, milk and cornstarch until smooth. Season lightly with salt and pepper. Set aside.
Spread fig jam in bottom of 7- or 8-inch baking dish. Top with reserved cheese mixture, smoothing top with spatula. Sprinkle with Parmesan.
Bake until cheese begins to bubble, 20 to 25 minutes. Place under broiler until top is golden brown,
2 to 4 minutes. Top with a few spoonfuls of fig jam and crumbled herbed goat cheese. Sprinkle with chopped fresh thyme and rosemary, if using. Serve with crusty bread.
