Method

In skillet, heat 1 tsp olive oil over medium heat; cook celery, olives and capers for about 5 minutes or until celery is tender. Add ratatouille and raisins; cook for 5 minutes. Remove pan from heat; stir in vinegar. Season with salt and pepper.

Top baguette toasts with Parmesan cheese and 1 tbsp caponata; drizzle with remaining olive oil.
