In 9- or 10-inch ovenproof skillet, melt butter with oil over medium- low heat. Stir in maple syrup, vine- gar and 2 tbsp water until com- bined. Add onions, cut sides down. Cook, without moving onions, and spooning cooking juices over top occasionally, for 20 minutes. Gently turn onions and cook, spooning cooking juices over top, until caramelized, about 15 minutes. Season with salt and pepper. Remove from- heat and let cool.
Preheat oven to 350°F. On lightly floured surface, unroll puff pastry sheet and cut out a circle the same size as skillet (trim off any excess dough). Using fork, prick dough all over. Carefully place dough over onions in skillet. Bake for 25 minutes. Let rest for 5 minutes; gently loosen edge of pastry with knife.
Place cutting board or large plate over skillet; carefully invert tarte onto cutting board or plate. Sprinkle with fresh thyme, if using.
