Dive (or should we say dip?) into this rich and creamy fondue that’s perfect for savouring on a cold winter’s night.

In large bowl, combine Cheddar cheeses; sprinkle flour over top. Using hands, mix together to distribute flour evenly.

In saucepan, bring cider and lemon juice to boil. Reduce heat; stir in cheese mixture, 1/2 cup at time, stirring after each addition until cheese is melted (if fondue is too thick, stir in more cider for desired consistency). Stir in apple butter, brandy (if using) and nutmeg.

Rub inside of fondue pot with garlic. Pour cheese mixture into fondue pot; set burner on medium heat.

Arrange apples, pears, grapes, mushrooms, cauliflower florets, chorizo and crusty bread on large platter for dipping.
