Preheat barbecue to medium-high heat (about 375°F); grease grill. Soak 8 toothpicks in water for 5 to 10 minutes.
Spray cantaloupe wedges with cooking spray; wrap each wedge with 1 slice prosciutto. Insert soaked toothpick into each wedge to hold prosciutto in place.
Place cantaloupe on grill. Close lid and cook, turning a few times during grilling time, until cantaloupe is golden and prosciutto is crispy, 3 to 5 minutes. Transfer to serving plate; drizzle with olive oil and sprinkle with sea salt and sage leaves.
