In bowl, stir together oil, vinegar, garlic, green onion, parsley, basil, rosemary, thyme, oregano and hot pepper flakes. Season lightly with salt and pepper. In glass jar, layer mari nade and cheese cubes, starting and ending with marinade. Top with lemon zest. Seal jar and refrigerate for 1 to 2 days.
Pour cheese and marinade into serving bowl. Serve with artisan crackers and olives.
