Method

Carefully distribute goat cheese slices among sterilized glass jars.

Slide sprigs of rosemary and thyme around inside edge of jars. Sprinkle with peppercorns. Pour in oil, ensuring that cheese and herbs are completely submerged. Seal jars; refrigerate for at least 1 week. (Can be refrigerated for up to 2 weeks.)

Note: Ensure that cheese and herbs are always immersed in oil; top up with oil if needed.

 

Did You Know?

Don’t panic if the olive oil solidifies in the fridge. Simply let stand at room temperature for 30 minutes.

 

Change it Up

Feta Cheese Marinated with Oregano & Sundried Tomatoes

Replace goat cheese with 7 oz cubed feta cheese, and replace rosemary and thyme with 10 sprigs of fresh oregano. Add 6 coarsely chopped sun-dried tomatoes preserved in oil, and 1⁄2 tsp hot pepper flakes, if desired.
