Method

In bowl, combine flaxseeds, Date Purée, maple syrup, egg white, cinnamon, fleur de sel, and ground chipotle pepper, if using. Add pepitas, oats and chocolate chips; toss to coat well.

Preheat oven to 350°F; grease 12-cup muffin pan. Divide mixture evenly in bottoms of prepared muffin cups; press down using back of spoon to compact. Bake until edges begin to brown, 15 to 18 minutes. Place pan on wire rack and let cool completely before unmoulding. (Make-ahead: Can be stored in airtight container at room temperature for up to 1 week or frozen for up to 2 months.)
