
Avonlea Clothbound Cheddar from
Prince Edward Island is made of raw milk from P.E.I. Holsteins, wrapped in muslin rubbed with lard, and aged for 12 months.
The resulting cheese is a deep, yellow colour with a crumbly texture and creamy tasting interior.

Our web editor Collen Tully brought a wedge back from P.E.I. on her excursion there last weekend. We tasted it in the test kitchen yesterday and all agreed that it had an aged
gouda quality about it. We also liked the crumbly texture. It would be great with a slice of
apple pie!
