How to roast garlic

There are few ingredients I love more than garlic. My motto, in this case, always is the more the better. Roasted garlic, however, takes my love for garlic to new levels. The garlic becomes soft, sweet and so delicious I often just eat it on a little piece of crusty bread with a sprinkling of salt. If you know anyone who swears they don't like garlic, this is the way to convert them! Here's how to make it: Slice off top third of garlic head to expose cloves; place on foil and drizzle cut side with oil. Wrap and roast in 400ºF (200ºC) oven until tender, about 35 minutes. Let cool enough to handle; squeeze out cloves.
