Indian-Spiced Wings With Yogurt Dipping Sauce

It’s hard to pass up any kind of barbecued dish, but few things are more difficult to resist than chicken wings hot off the grill. They've made an appearance at every barbecue I've hosted because they're delicious and super easy to prepare. If you’re not already convinced, here are some reasons to love chicken wings.
  1. They’re versatile. They taste great – grilled, baked or fried – and you can combine a variety of flavours to create completely different wings every time.
  2. They’re inexpensive and easy to find. You can prepare two pounds of wings (about four servings) for under $10.
  3. They're fun to eat and people love them. Especially kids!
This recipe for Indian Spiced Wings is inspired by my love of South Asian food. You can marinate these wings for up to 24 hours, but if you’re pressed for time, 30 minutes in the refrigerator will do the trick. So what is garam masala? It's a South Asian dry spice blend that comes in many different variations and often includes: cardamom, black pepper, cumin and cloves. Many cooks like to make their own blends, but you can also find it in many grocery stores and Asian supermarkets. Traditionally, it is added to a dish just before serving, but I’ve chosen to use it as the base for my marinade. If you’d like to make your own, try our garam masala recipe. Indian-Spiced Wings With Yogurt Dipping Sauce (Makes about 4 servings) 2 tbsp lemon juice 2 tbsp vegetable oil 2 tsp garam masala ¼ tsp salt 2 lb (900 g) chicken wing drumettes and winglets 1 tbsp butter, melted (optional) Yogurt Dipping Sauce: ¾ cup Greek yogurt 1 mini cucumber, grated and squeezed dry 1 tbsp chopped fresh mint 1 clove garlic, minced Pinch each salt and pepper In shallow dish, whisk together lemon juice, oil, garam masala and salt. Add chicken; toss to combine. Cover and refrigerate for at least 30 minutes or for up to 24 hours. Grill wings, covered, on greased grill over medium heat, turning occasionally, until crisp and no longer pink, about 25 minutes. Brush with butter (if using). Yogurt Dipping Sauce: Meanwhile, in bowl, combine yogurt, cucumber, mint, garlic, salt and pepper. Serve wings with dipping sauce. Here are some other tasty chicken wing recipes to get you inspired.
