Not just muffins: The multitasking muffin tin

We live in a world where foods are often prepackaged for us. But single-serving meals can easily be made by those who prefer fresh, homemade eats, too. Enter the muffin tin. You can take just about any old baked recipe and divide the portions into its wells instead of the called for bakeware, but these recipes are a few of my favourites. 1. Macaroni and cheese cups

Mac and cheese is quite rich, so downsizing your portion is a great way to enjoy our Ultimate Macaroni and Cheese. Forgo the casserole dish for 24 muffin wells. 2. Mini frittatas Mini Spinach and Feta Frittatas Eggs are the perfect ingredient for baking in muffin tins, so why not try our Mini Spinach and Feta Frittatas? They make a great breakfast on the go. Or, try any frittata recipe and simply transfer your ingredients to the muffin wells before pouring your eggs in. 3. Bite-size brownies The-Best-Chocolate-Toffee-Brownie While you may have trouble eating just one, baking your brownies into bite-size pieces that are ready to eat can keep your serving size in check. Trust us: You won't have the willpower when it comes to The Best Chocolate Toffee Brownies. 4. Phyllo cups For a quick and creative appetizer, phyllo pastry is practically a given. But instead of serving store-bought apps, make your own Flaky Phyllo Cups and fill them with whatever ingredients you and your guests love, like crab salad. 5. Shortbread cups Chocolate Toffee Shortbread Cups Rather than your typical butter tarts, why not make chewy, gooey shortbread bites like these Chocolate Toffee Shortbread Cups?
