The Foodie-file: Superbowl Guacamole

Molcajete, guacamoleHave you noticed your local supermarket loaded down with avocados? You can thank the Super bowl for soaring avocado sales. There is more guacamole eaten on super bowl Sunday than any other day of the year. My brother-in-law brought me a molcajete from Mexico, I always make my guacamole in it – it think it lends an authentic flair. A molcajete is a mortar and pestle made from lava rock. There are many imitation versions of them made from concrete and stone – to use for food and not just decoration it must be made from lava rock. Quite often they are fashioned after a farm animal, mine is a pig. For my guacamole I add a bit of chopped onion, lots of lime juice and salt and coriander, sometime jalapenos depending on who is eating it to avocados. Then I serve it right out of the molcajete.
