Jam-filled treats, like these bars layered with cherry jam, are begging to be enjoyed with a cup of your favourite brew.

Preheat oven to 350°F. Mist 8-inch square cake pan with cooking spray; line with parchment paper.
Base: In bowl, whisk together flour, icing sugar and salt. Using fingers, rub butter into flour mixture until crumbly. Press into bottom of prepared pan; prick all over with fork. Bake until light golden, 20 to 23 minutes. Let cool slightly.
Frangipane: Meanwhile, in bowl, using hand mixer on medium speed, beat butter with sugar until fluffy, about 3 minutes. Beat in eggs, 1 at a time, scraping bowl after each addition; beat in almond extract. Stir in ground almonds, flour and salt just until combined.
Assembly: Spread jam over cooled base. Spoon Frangipane evenly over top, spreading gently to not disturb jam; sprinkle with flaked almonds. Bake until top is puffed and golden and cake tester inserted in centre comes out clean, 40 to 43 minutes. Let cool in pan on rack.
Dust with icing sugar (if using). Using serrated knife, cut into bars.
