MethodIn saucepan, stir together apricots, honey, lemon rind, lemon juice, cinnamon stick and 1-1/4 cups (300 mL) water; bring to boil.
Reduce heat and simmer, uncovered, until thickened and syrupy and apricots are tender, about 30 minutes. Discard lemon rind and cinnamon stick. Stir in pine nuts.
