Method
Preheat oven to 350°F; grease 8-inch round baking dish.
In bowl, gently stir together cherries, sugar, lemon juice, cornstarch and almond extract. Pour into prepared baking dish; set aside.
In separate bowl, combine oats, ground almonds, brown sugar, sliced almonds and salt. Using your hands, rub butter into mixture until crumbly. Sprinkle evenly over cherry mixture.
Bake until top of crisp is golden and edge is bubbling, 35 to 40 mintues. Let stand for 10 minutes before serving. Serve with vanilla ice cream and fresh mint, if using.
