Chocolate Raspberry Lemon Cookies

Soft and chewy, these cookies have the perfect balance of bright citrus zest and gooey chocolate. Pair it with our Raspberry Clover Club.

Method

Preheat oven to 350°F. Line baking sheet with parchment paper; set aside.

In bowl, whisk together flour, cocoa powder, baking soda and salt; set aside.

In separate bowl, beat butter with granulated and brown sugars until light and fluffy. Beat in egg and vanilla until smooth. Using spatula, fold in reserved flour mixture. Stir in chocolate, raspberries and lemon zest until combined (do not over mix).

Using your hands, form 18 balls (about 2 tbsp each); place 2 inches apart on prepared baking sheet. Flatten balls slightly. Bake until edges of cookies are set, 12 to 15 minutes. Sprinkle with flaky sea salt. Let cool on baking sheet on wire rack for 5 minutes. Transfer cookies directly to rack; let cool completely.
