Method

Dough  In saucepan, heat milk, 1 cup water, butter and sugar over medium heat until butter begins to melt (do not boil). Remove saucepan from heat and stir until butter has melted. Let cool (mixture should not exceed 110°F). Sprinkle with yeast and let stand, about 10 minutes.

In large bowl, combine flour and salt; add yeast mixture. Using electric or stand mixer fitter with dough hook, beat on medium speed until smooth and soft. On lightly floured work surface, knead dough until smooth and elastic (add more flour, if needed, to keep from sticking). Shape dough into ball, transfer to greased bowl, turning to coat well. Cover with damp tea towel and let rise in warm, draft-free place until doubled in size, about 1 hour.

Filling  Meanwhile, in small bowl, combine butter, maple and brown sugars and cinnamon. Set aside. Punch down dough. On lightly floured work surface, roll out into 15- x 10-inch rectangle. Spread reserved filling over dough, leaving 1/4-inch border along 1 long edge. Starting at side opposite border, roll up evenly into log and cut into 6 to 8 slices.

Grease bottom and sides of slow cooker; line with parchment paper. Transfer dough slices to prepared slow cooker. Place paper towel over inner container (to absorb condensation) and cover. Bake on High until outer edges of brioches are golden brown, 1 1/2 to 1 3/4 hours. Remove brioches from slow cooker along with parchment paper; let cool. (Make-ahead: Can be stored in airtight container at room temperature overnight or frozen for up to 1 month.) Drizzle with Vanilla Glaze.

 

Vanilla Glaze  In bowl, whisk together 2/3 cup sweetened condensed milk, 1/2 cup softened unsalted butter and 1 tsp vanilla until smooth. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days.)
