Method
Cookie Butter Filling
In small bowl, stir gelatin with 3 tbsp water; let stand for 5 minutes.
In small saucepan, heat cream, vanilla and cinnamon over low heat for 5 minutes. Set aside.
In bowl, using electric mixer on high speed, beat egg yolks with brown sugar until doubled in volume. On low speed, gradually beat in reserved hot cream mixture. Scrape mixture into saucepan over medium-low heat and cook, whisk- ing constantly, until mixture coats back of spoon. Remove from heat; stir in gelatin and cookie butter. Transfer Cookie Butter Filling to large bowl. Cover with plastic wrap and refrigerate for at least 6 hours.
Choux Pastry
Preheat oven to 375°F; line baking sheet with parchment paper.
In medium saucepan, heat 1/3 cup water, the milk, sugar, salt and butter over medium-high heat until butter is melted. Remove from heat; add flour all at once and stir vigorously with wooden spoon. Return saucepan to medium heat and cook, stirring constantly, until dough pulls away from side of pan and forms ball.
Cook for 2 minutes to dry out dough; remove from heat. Using handheld electric mixer on medium speed, beat eggs, one at a time, into dough, beating well after each addition, until dough is glossy, smooth and soft. Transfer dough to pastry bag fitted with 1/2-inch plain tip; pipe 16 puffs (about 3 tbsp each) 1 1/2 inches apart onto prepared baking sheet.
Bake for 25 minutes; reduce temperature to 325°F and bake for 20 minutes. Remove from oven and let cool completely, at least 45 minutes.
Assembly
Meanwhile, using electric mixer on medium-high speed, whip cold Cookie Butter Filling until smooth and fluffy, about 1 minute. Transfer to pastry bag fitted with star tip. Set aside in refrigerator.
Slice cooled choux pastry puffs in half horizontally; pipe reserved Cookie Butter Filling on bottom halves of puffs and top with top halves. Dust profiteroles with icing sugar, if using.
